Classic Mushroom Gravy

We're gearing up for the holidays, and in my opinion there's always one dish that needs to be present whenever you are cooking a big holiday meal, a classic old fashioned mushroom gravy. This is the vegan version of the gravy that was always served at my house growing up and it's the creamiest most delicious thing ever. It's a decadent treat as many classic gravies are, since we're relying on a traditional roux to make it (a mixture of fat and flour to thicken our sauce), but this recipe feeds a crowd, and it's the Holidays so you can splurge a little on the big day. I love how the ingredients are so simple and can be found anywhere. It's so yummy, especially poured over mashed potatoes or over your favorite holiday roasts.

CLASSIC MUSHROOM GRAVY

Yield: 10 servings ⎮ Prep time: 15 minutes ⎮ Cook time: 30 minutes
 

Ingredients

  • 3/4 of a stick of non-dairy butter
  • 2 onions, finely diced
  • 5 shallots, finely diced
  • 1/2 cup all-purpose flour
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups veggie broth
  • 1 tablespoon white wine
  • 1 tablespoon non-dairy heavy cream
  • 5-6 cups sliced mushrooms (we love combining shiitake and white mushrooms but choose your favorite)
  • 1-2 cups of water (or veggie broth) to thin out the consistency of the gravy
  • A few tablespoons of tamari soy sauce (until your reach the color you like and level of saltiness)
 

Directions

  1. Heat a pot at low heat and melt the butter.

  2. Add the onions and shallots and let them sweat slowly in the butter for 15 to 20 minutes. This is key for developing classic gravy flavors.

  3. Add the flour, salt and pepper, and let cook stirring often for 2 minutes.

  4. Add the broth, mix well, and let it cook until it has a rich, thick consistency.

  5. Add the wine, cream and mushrooms (you may need to add the mushrooms in batches).

  6. Add a bit of the extra water or veggie broth to thin out the consistency until it is to your liking. Let this simmer on low until the mushrooms are tender.

  7. Add some tamari soy sauce and taste as you go along. The tamari will add an extra layer of a salty umami flavor, and it will also give your gravy a lovely color.

  8. Turn off the heat and serve next to your favorite holiday roasts or over creamy mashed potatoes and enjoy!
